Two things to share with you and both are yellowish gold… :o)

I know most of you already have your menu’s all planned out in detail and know exactly what you’ll be making OR serving for Thanksgiving dinner … B-U-T… in case there is anyone out there who is still searching for the perfect recipe to add as a side on your Thanksgiving table, I HAVE ONE! It’s my corn casserole; my son, Kristoffer’s favorite, Sara’s family from Columbia, South America’s favorite, and now Jean and Bithar, from Haiti, and one of their children, Deborah’s, favorite. It’s not my own personal recipe and I’m sure it’s on Pinterest for everyone to make.

I was sitting at a table with Alba and Edgar (Sara’s parents), the other night at our church’s Thanksgiving dinner and Alba showed me a paper plate (she was sort of hiding) that had a pretty big hunk from one of my casseroles…(it’s a good thing I took two!) Anyway, she said she had tried to make it one afternoon, following the directions from my blog post about it, but she said, I must have some kind of “special touch” because she said hers didn’t turn out like mine… she thinks it’s the greatest!

So with a compliment like that, I thought maybe I better share it again… I won’t share the whole post… as part of it was about Ten Ping and then another part about a pie…so I’ll cut and paste the Corn Casserole part for you right here… no links to have to click on…

Here’s the recipe…for Corn Casserole:

It only takes these 6 ingredients…

[[ I accidentally picked up the Vegetarian box of Jiffy Corn Muffin mix, but I always just use the regular. I also show a 16 oz container of sour cream, because I was doubling my recipe. ]]

Mix together with a spoon:
1 egg
1 8 oz container of sour cream
1 stick of butter (melted)

Then add:
1 package (regular) Jiffy Corn Muffin Mix
1 can whole corn (drained)
1 can cream corn

Mix everything together until it’s blended fairly well. It will still look a bit lumpy because of the corn…
Pour into a buttered casserole dish and bake at 350 degrees for about 35-45 minutes… until it’s lightly golden brown…It should feel almost like a cake…sort of soft but not squishy… you don’t want to overcook it…

  1. Here I am, the first to let you know I’d like my name entered for this contest. If I could have just one Thanksgiving dish, it would be dressing.

    My sisters usually have Thanksgiving dinner for all of us, and I usually make the rolls. Now that there are fewer of us, if I make 6 dozen butterhorn rolls from Better Homes and Gardens, there are leftovers for everyone to take home. I’ve been making them for Thanksgiving since I was in high school, so these are a Grotzky family tradition. Last year, on impulse, I also made the Amish rolls from King Arthur Flour. Both my brothers-in-law instantly recognized them as the rolls their great-aunt and grandmother used to make without a recipe. The key ingredient seems to be potatoes.

    I hope your trip to the doctor was productive and as pleasant as this sort of thing can be. And Happy Thanksgiving to you and to everyone who reads your blog.

      This was probably TOO hard of a question to ask… “what’s your favorite dish on Thanksgiving?” It’s almost like asking who’s your favorite child!
      I love the dressing to and Kristoffer called us last night to tell us he would be making his… it’s pretty delicious. Kristoffer is also going to make some yeast rolls and bring them.
      It sounds like you might be the Queen of butterhorn rolls, Marilyn!

      I think everything is going to get started next week. He’s waiting on a call to get his Chemo port put in and then it will be forward ho, I guess. We got the “nickle tour” of the place yesterday and while it’s very very beautiful, I wish it could have been some place I’d never seen the inside of it!

  2. I guess I’m second, and would like to also enter the contest. I don’t think I could EVER do without turkey for Thanksgiving, but the next favorite dish, is sweet potatoes with butter, brown sugar and marshmallows on top! I know, it’s loaded with calories, but the only time I make it is for Thanksgiving, which makes it extra special! It always warms up nicely too, for leftovers.

I can take this warm or cold…and love to eat it for breakfast the day after Thanksgiving or any day really!

  3. I love everything about Thanksgiving… Mostly I am loving the grands coming over and helping me with it.. Their mother doesn’t really cook so they enjoy learning how to do so much of it.

  4. I love that corn pudding, as we call it. I have had the same recipe for years! But for Thanksgiving it is my grandmother’s oyster dressing! Cornbread, white bread, lots of onions and celery, eggs and a quart of oysters! Also the dark meat of the turkey and my fresh cranberry relish. Everyone asks for the recipe for that so here it is:
    2 apples, 2 oranges, washed and unpeeled, 1 bag cranberries, 1 large can crushed pineapple, broken up pecans (optional) whole berry cranberry sauce (optional), and 1 1/2 cups sugar.
    Chop apples, oranges, and cranberries up fine in food processor, stir all together. If it doesn’t look “red” enough, add some whole berry cranberry sauce. This keeps a long time in fridge, and makes a LOT.

  5. My favorite dish for Thanksgiving is the stuffing that has come from the inside of the turkey like my mom made when I was growing up. I love the three dresses for the Efner dolls. Have a wonderful Thanksgiving.

      My mom used to be pretty famous for her dressing… not so much anymore, but I remember having bread drying out on a sheet on her bed to use… we made LOTS of dressing!

    After hearing everyone’s food choices, I’m starving. Everything sounds so good.
    My favorite and just about everyone else who tries it is Broccoli Casserole. I’ve been making it for years. Very easy too. Mayo, cream of mushroom soup, eggs, grated sharp cheddar cheese and chopped broccoli. Topped with buttered bread crumbs. It is a full meal in itself, but I always manage to fill my plate with the other goodies too. Delicious reheated as a leftover.

  8. Oh my goodness, I’m so hungry for everything mentioned on everyone’s menu. I think the corn casserole (which I plan on making…I add tiny onion bits) is my favorite but I always made the broccoli cauliflower casserole and Joy, yours sounds interesting. hint hint. : )
    I also loved my mother’s dressing and mashed potatoes and gravy. My sister always made the ones that have sour cream in them. Pumpkin pie. If you don’t have time to make pies, Costco has the best pumpkin pies ever…the pumpkins come from somewhere in Illinois. They are as good as homemade pies. Oh Linda, the sweet potatoes sounds heavenly. And lastly…my mother’s Apple Crunch recipe.

    2. For anyone interested:
      Broccoli Casserole
      1 can condensed cream of mushroom soup
      1 cup mayonnaise
      2 eggs, slightly beaten
      1 small onion, grated
      2 packages 10 ounces each frozen chopped broccoli, thawed and drained
      1 cup shredded sharp Cheddar cheese
      1/2 cup buttery bread cubes.
      Mix until well blended,stir in broccoli. Pour into casserole and top with bread crumbs.
      Bake 350 20 minutes or until lightly browned and bubbly.
      I triple the recipe and probably add more cheese. Takes a lot longer to cook but then, the large dish is necessary as everyone wants some to take home for leftovers.

          I was putting my recipe the Corn Casserole back in the recipe box and noticed the one right behind it was my Broccoli Supreme casserole, like your’s… only difference is mine has crushed up Ritz crackers on top instead of bread crumbs.

    My mother used to mak all of her favorite dishes for Thanksgiving. We (her six kids) usually have all or most of these dishes for our celebrations. These include fresh cranberry sauce, green bean casserole, green Jell-O salad, several home-made pies, turkey, dressing, and gravy. I think my favorite thing is dressing and mashed potatoes, a few slices of turkey, all topped by gravy.
    I love the little golden slips and several of my “Little Darlings” would love to wear it.

  11. My favorite thing to eat at thanksgiving is Green Bean casserole. I have the fixings for the corn casserole and plan on using your recipe instead of another one I found on line.

My favorite dish is the dressing, but I always have to make praline sweet potatoes (probably like your sweet potato soufflé) because the kids all love them. They ask for the leftovers too!   13. I would love to be entered for a chance to win a Jeanne slip! Such a treat for your readers, Jeanne, thank you! My favorite Thanksgiving food is Oyster Stuffing! I only use about 1/2 cup or so, in a roasting pan size bird, so not as much as Sissy, but I’m sure we both love it just as much! It’s just not Thanksgiving without it. Two of my four boys were here last year and made this, as well as the whole Thanksgiving meal, for me and our families. I was blessed immeasurably! This year, I’ll be alone and you all are making me hungry, LOL!

    Know that I’ve been praying for George, you, and your family….and will continue, until this is gone and he is healthy and happy again. I’m sure God has this miracle for you all! Worry will just rob you of the day, so try hard to know God has got this, and all you need to do is to take care of George, and be his advocate. If he gets a sick stomach from it, don’t hesitate to call the doctor and ask for a script for Zofran, or it’s generic. It comes as a pill to swallow or one that dissolves under the tongue, and works great for that purpose. He may not even get sick during this, and of course, that would be our wish. May God continue to bless you both!

  15. Wow! What a lot of Comments! It may set a record. I like the dressing best as I don’t have it the rest of the year. When we lived in Japan in 1983, for our first Thanksgiving dinner, I cooked everything as usual, but when the meal was finished, my youngest son asked, “Where were the deviled eggs?” We had had Thanksgiving dinner for four years with friends in Dayton, Ohio, and my friend always fixed deviled eggs. So I got up after dinner and fixed them, but he was entirely too full to eat any. It’s a family joke now. Funny how many memories your Blog brings back.

    I’m on Magalie’s list for a Little Darling, maybe in April, thanks to your Blog. I feel fortunate to have gotten my name in. “Thanks” for everything you are “giving” us, sewing, cooking, life experiences and blessings. Blessing to you and your family.

      I told George about your little Ten Ping getting her hand chewed off while you were visiting in WV. He said maybe someone would buy it as an amputee doll… you know, maybe they are an amputee and would like a doll with the same disability…of course you’d have to smooth it up a bit I guess… no one would want to buy a doll with a “chewed off” arm.

      We got 13 eggs today so I’m thinking I’ll make some deviled eggs tomorrow too..thanks for reminding me. My family wanted German Meatballs AND turkey so I just got them made. We were planning on going simple, but we now have enough to feed half of Carbondale!

    I love your slips they are so darn cute and I would love to be entered for the pretty gold one. Thanks to Joy I was able to get my name on Magalie’s list and she contacted me a few days later. My girls will be ready some time this summer. I ordered sculpt 1 and 2 with blue gray and blue green eyes. I was lucky enough to win a sculpt 1 on ebay in May. She’s so pretty, she has green eyes and sweet little freckles. When I opened up the package and lifted her out my heart melted. I would love to see pictures of every ones little darlings. Maybe it could be a future post. I think it would be fun.

    1. Almost forgot… I am blessed with a husband that loves to cook.. in fact thanks giving is his favorite holiday. I love everything about the day the food is always awesome. I think spending time with family and just enjoying each others company is the best. I love my husbands herb dressing (stuffing around these parts LOL) yum!   17. I was so busy today that I haven’t had time for the computer at all, but I couldn’t let the day pass without sending Thanksgiving wishes to you and your readers. What a wonderful blog you have, Jeanne, with so many caring followers who always have something interesting to share. It is surely a blessing to you and to all who read it, and today may very well set a record for comments received! Thanks to all who shared their favorite foods, and thanks for the recipes, too. It was a treat just reading about them. I’m all about vicarious eating!

    Reading about all these delicious foods, it sounds like everyone will have a bountiful table this Thanksgiving! I would like to share some favorites without being entered into the contest, because my LD will not be born for many more months! Two of my favorite Thanksgiving dishes are cream cheese mashed potatoes and cloverleaf rolls with butter and homemade preserves. The cream cheese potatoes were my mother-in-law’s recipe. She would make them a day or two ahead, and there were never any left after the meal. The cloverleaf rolls were my husband’s grandmother’s contribution, as she was the baker in the family. They were the lightest, fluffiest, “buttery-est” rolls I’ve ever had, and sometimes I would have another for dessert instead of pie. Also, it may sound silly, but my father-in-law and I loved green olives, and my mother-in-law would have to refill the relish tray again and again before the meal because we would “sneak” olives off the table all afternoon until dinnertime. It was a little joke between us, and we would wink at each other when my mother-in-law would wonder who was eating all the olives. So many fond memories of the people who make our celebrations special!

    I’d also love to enter the contest, but I’m sure I’m way too late! Oh, well….

    My favorite thing is after Thanksgiving dinner, to pick meat off the carcass in the fridge! I’d have it covered with foil, and be doing things, and that carcass just sings its siren song, and I simply Can Not Resist!! Turkey is my favorite meat anyway, I like it better even than steak (and I really do like steak!), but to have that carcass just sitting there…. My favorite aunt used to say it was the best thing about Thanksgiving dinner, and I’ve come to realize she’s right!!

    I don’t have to cook tomorrow–we’re going to our son’s–but today I bought a turkey breast to cook just for us, either later this weekend, or maybe freeze it now and bring it out in December. (And the carcass will be All Mine, as my hubby doesn’t want to bother with anything “bony”! LOL)
