A Recipe for your Fourth of July Celebrations… Broccoli Grape Salad

One quick note: Molly’s set, “The Babysitter,” is ending Tuesday evening, but unexpectedly, we are leaving town that morning. I wanted to let whoever the winner is, know that I probably won’t get it mailed off until Thursday. We are dashing off Tuesday morning to visit my hubby’s brother. He is very sick and has asked to see my husband. We will probably be gone a few days and I wasn’t prepared with any pre-scheduled posts, but Linda; our beloved Linda, sent me a recipe today that saved the day! I haven’t tried her recipe, but I have one very similar, and it’s wonderful, and besides, she gave me the recipe for the Amish Refrigerated Pickles (HERE) and they are fantastic…so I’m guessing we might have the same taste buds. She told me she’s made it twice already…

So here’s to good eating!

Broccoli Grape Salad

2 bunches fresh broccoli, cut into bite sized pieces
1 and 1/2 cups chopped celery
1 bunch chopped green onions
1 and 1/2 cups red grapes (halved)
1 cup raisins (optional)
1/2 pound of bacon, cooked crisp and crumbled
1 cups nuts (optional) pine nuts, sunflower seeds, almonds, etc

Dressing:
1 and 1/2 cups light mayonnaise
1/4 cup sugar
3 Tablespoons apple cider vinegar
3 Tablespoons milk

Place salad ingredients in a large bowl (save the nuts for later)

In a small bowl, combine dressing ingredients and pour the dressing over the salad ingredients, stirring until combined.
Cover and refrigerate several hours or overnight to allow the flavors to blend. Add the nuts just before serving.
This recipe doubles or triples for a larger crowd! ENJOY!

  2. I’m so glad that I could help out and maybe give someone an idea of what to serve for the upcoming holiday celebrations. Yes, this is VERY good, more so if left in the fridge overnight.

    We have been in the Mark Twain State Park and there was no service to my phone…so I couldn’t answer anyone. Now we are almost there…so I’ll just say a quick hello and read your comments later…

    1. Immediately had to look up Mark Twain State Park. But, there are several places with Mark Twain in them in Missouri. Presume that is where you are? How fun. Like where is Waldo? but where is Jeanne?
      Some great recipes have been shared here. Yum.
      Only thing I can add is, we do pure fruit salad. Just the cut up fresh fruit, but the topping is optional. Surprise, it is sour cream and sugar added to taste. Just a spoonful on top makes the fruit pop. After my mother died, the fruit salad queen, I had no idea what was in the topping. Finally figured it out and all the relatives who had been asking about it, now know the answer.
      Hoping George’s brother is doing much better with his visit.

      1. Joy, I think Jeanne got the Mark Twain State Park a bit mixed up with Mark Twain National Forest. Mark Twain Lake is in northeastern Missouri by Mark Twain Lake, where my hubby used to fish all the time, but she is more than likely talking about Mark Twain National Forest, which is in south central Missouri. It is large and encompasses several areas, not just one big forest. Here in Missouri a lot of things are named after Mark Twain, as you can imagine.

    How about we all share a summer salad Recipe while Jeanne and George are gone

    When I saw Grape and salad I thought of a new family favorite we have
    GRAPE. SALAD
    4 lbs green grapes ( can use red or a combo of both)
    8 ounces cream cheese …softened
    2t vanilla
    1 cup sour cream
    1/2 cup sugar
    1/2 cup of toasted pecans or sliced almonds ( I like almonds 🙂
    Wash and dry grapes
    Mix together the softened cream cheese, sugar, add sour cream and vanilla.
    Fold in grapes and stir until well coated. Pour into serving dish and top with toasted nuts
    Referee rate until time to serve
    The recipe also calls for 2T brown sugar sprinkled on top but to me it is too sweet.
    It is like having fruit with the dip already on it.
    This makes a very large bowl full for a gathering and is easy to cut the recipe in half

  10. Perfect Summer Fruit Salad

    2/3 cup fresh orange juice
    1/3 cup fresh lemon juice
    1/3 cup packed brown sugar
    1/2 teaspoon grated orange zest
    1/2 teaspoon grated lemon zest
    1 teaspoon pure vanilla extract

    2 cups fresh pineapple, cubed
    2 cups fresh strawberries, hulled and sliced
    3-4 kiwi fruit, peeled and sliced
    2 oranges, peeled and sectioned
    3 bananas, peeled and sliced
    1 cup seedless grapes
    2 cups blueberries

    In a medium saucepan, mix orange juice, lemon juice, brown sugar, orange zest and lemon zest and bring to a boil over medium-high heat, stirring occasionally. Once mixture reaches a boil, reduce heat to medium-low and simmer gently until slightly thickened, stirring frequently, about 5 minutes. Remove from the heat and stir in the vanilla extract. Set aside to cool.

    In a large glass bowl, layer the fruits in the order given. Slowly pour the completely cooled sauce over the fruit. Cover tightly and refrigerate 3-4 hours to let flavors meld. mix fruit gently and serve. May be topped with a dollop of whipped cream and/or served with pound cake or angel food cake for a fresh dessert.

  11. I pray you will have a safe trip there and back. The broccoli salad recipe is a good one, although My recipe calls for raisins instead of grapes. I wish I had one to share as some others have, but my mind is blank at the moment.

    All these salads sound wonderful!! I do love the combination of broccoli, grapes and bacon, and have done something similar (dressing is a little different), but it’s super-good. I’ll have to try this version, too. Thanks!
